The Story

The romantic legend tells of a Qing Dynasty scholar studying on an island. His wife had to cross a bridge to bring him noodle soup, but it always went cold. She discovered that a layer of chicken fat on top kept the broth scalding hot beneath. She carried the raw ingredients separately and cooked them tableside in the sealed-hot broth. The dish is named for her daily bridge crossing.

What to Expect

You receive a large bowl of deceptively calm broth — it looks still, but a layer of golden chicken oil keeps it near boiling. Several small plates of raw sliced meats, vegetables, a quail egg, and rice noodles arrive alongside. You slide the ingredients in one by one — raw meat first, then vegetables, then noodles. The superheated broth cooks everything in seconds. The result is clean, bright, and delicate.
