The Story

Legend says this candy was created for the imperial court during the Han Dynasty, earning its name because the ultra-fine sugar strands resemble a dragon’s whiskers. The art of pulling sugar into 16,000+ hair-thin threads nearly died out but has been revived as a street food spectacle across China. Watching a vendor pull and fold the sugar is half the experience.

What to Expect

Each piece looks like a small white cocoon — a bundle of wispy sugar threads wrapped around a filling of crushed peanuts, sesame, and coconut. Pick one up gently (they’re fragile) and pop it in your mouth. The threads dissolve instantly, leaving behind the crunchy filling. It’s like eating sweet, edible cotton.

Tips

Eat these immediately after buying — humidity is the enemy. Within an hour the delicate threads start to melt and stick together. Don’t try to save them for later. Street vendors who pull the candy fresh in front of you are the best source.
