Jiàng bǎn yā is one of Changsha’s most popular takeaway foods — you will see whole flattened ducks hanging in shop windows all over the city, their dark lacquered skins gleaming under heat lamps. The duck is marinated in a complex spice blend, pressed flat, and then slowly dried and braised until the flavors concentrate intensely. It is sold whole or chopped into pieces, and locals buy it to snack on while drinking beer, as a cold appetizer, or simply walking down the street.

The “bǎn” in the name means “board” or “flat,” referring to how the duck is pressed flat during preparation.

What to Expect

The duck arrives chopped into small pieces through the bone, the skin a deep reddish-brown. It is served at room temperature or slightly warm. The texture is quite different from roast duck — it is drier and firmer, more like an exceptionally flavorful jerky.
