The Story

Shenzhen sits on the South China Sea, and its proximity to some of China’s most productive fishing waters means that seafood congee here is made with genuinely fresh-off-the-boat ingredients. While congee is enjoyed all over China, Shenzhen’s coastal version is loaded with an abundance of seafood that reflects the city’s maritime heritage. The fishing village of Shekou, one of Shenzhen’s oldest neighborhoods, was famous for its seafood congee long before the city became a modern metropolis.

Many congee shops in Shenzhen let you choose your own live seafood from tanks, which is then cooked into the porridge right before serving.

What to Expect

A large, steaming bowl of silky white rice porridge arrives, its surface dotted with pink shrimp, white fish fillets, and other seafood. The rice has been cooked down to a thick, creamy consistency — somewhere between a soup and a porridge. The seafood is added at the last moment so it remains tender and fresh rather than overcooked. You will taste the clean, sweet flavor of the sea in every spoonful, complemented by ginger and a sprinkle of white pepper. Scallions and a drizzle of sesame oil finish the bowl with aromatic warmth.

Tips

Stir gently before eating to distribute the seafood evenly. The congee is extremely hot, so take care with the first few spoonfuls. This is a perfect late-night or breakfast dish — comforting and easy on the stomach. If given the option to choose your own seafood, shrimp and fresh fish are the most reliable choices. Add a dash of soy sauce or white pepper at the table to adjust the seasoning to your taste.
